Wine & Beer Making Problems - Pectolase mistake

In addition to using pectolase in wines, I also use it for dropping sediment overnight in freshly pressed apple juice, where it's action or inaction are more immediately noticeable (than if used in a wine that will takes weeks to ferment and more weeks to clear).

So when using some 'old' out of date pectolase I've instantly seen it fail to work, despite bringing indoors and putting the buckets in front of our open fire as I'm pressing into November. Some old stuff just failed to work at all, but a fast drive to a supplier of fresh stuff got it sorted.

Another consideration may be that pectolase is a protein, and if simultaneously using finings that drop proteins this may reduce effectiveness.

Quote:

I'm not sure that the pickers are that careful, they get paid by weight, we would visit bushes we know, avoiding the ones that smelled mousy in blossom who's fruit will carry the taint, in berry you don't know what the fruit will be like if you don't know the bush.

I have found this too with some bushes.
I used to make alot of Elderberry wine and as stated found some of the blossom smelled cat p***y and so avoided them.

Kalli, a 6gallon beer fermenting bucket with a lid for £5 is the cheapest option as Craig mentioned, it will mean slow siphoning but surely once you present OH with delicious wine @ less than a quid a bottle he has to agree to your buying a couple of 25lt fermenters with taps, more production, more savings, keep up the good work, atb OB.
