All Spirit kits make 4.5 litres (1 gallon) and can produce up to 21% alcohol.
These kits are made in a demijohn using very special nutrients, yeast and sugar with a carefully controlled fermentation temperature.
At the end of fermentation, the liquid is cleared leaving it tasteless and colourless liquor similar but denser than water. With the Condessa kits, the liquid is mixed with an ion exchange resin for 20 minutes to
improve purity.
Finally an essence is added to give the desired flavour (with the exception of the Vodka kit where it is not necessary).
