Hi Guys

I am returning to wine making after several years, I was lucky to be given a large amount of very old kit via Freecycle this belonged to a Vicar who had passed away. Anyway, getting there,  in this bundle were serveral hand written recipes. The only one I can decifer at the mo is for  " Cumberland Brandy". Maybe someone has heard of it or would like to try?

Its as written.

2 lbs Best Wheat
2 lbs Raisins ( Minced)
4 lbs Demerara Sugar
1/2 oz Yeast
The white of one egg lightly beaten
9 pints cold water


Put all ingredients into vessel, stir well to stir sugar away.
Stir every morning for 14 mornings
Strain and remove dross.
Airlock and work out.

2nd Run

Put dross in vessell, add 3lbs white sugar and 9 pints water.
Stir every morning for 14 mornings.
Strain, airlock, work out.

Good to drink in 10 weeks.

Hi Radders,

This recipe has come up before. Go to the search tab and do a search on "cumberland" in the "wine and beer recipes" section, selecting "all posts" and you should see a fair bit of traffic on this subject.

Your recipe looks very old school and I'd avoid the "white of one egg".  We tend to use "KwikClear" or similar now.

Must need lots of amalase to get rid of the starch.
