Berry's "First Steps in Wine-making" has the reputation for using a lot of sugar and creating somewhat sweet wines. My 2014 elderberry, made from that recipe, is rather dry - even a little drier than my personal taste. I used Burgundy yeast and a little citric acid. Can you think why it has turned out decidedly dry?

Bish, The dried recipe uses 2 1/2lb to the gallon so 1080/85 and only11% ish, the fresh version 3 1/2lb 1115 15% ish, which recipe did you use. Assuming it was the latter it must have fermented right out and the elderberries probably had very little sugar. Wink

I used the fresh (3Żlb) recipe, and added citric acid and pectic enzyme, which Berry does not mention. And, as I said, Burgundy yeast. I picked the berries in the second half of September, which is probably right for North Wales, but I can't remember what 2014's weather was like (sun/rain/warmth/sugar?)
