German Weiss wheat beer kit

This being my first wheat beer I'm not sure what to expect .
Just racked off into bottles having been in the bucket for 10 days FG 1012 so a little sweet for me however, It appears more cloudy than a real ale at this stage and much less sediment on the bottom.

It exploded in the first few days of fermentation losing a lot of foam over the sides of the bucket so have I lost to much active  yeast hence the higher than expected FG and could this be the reason why the yeast colony at the bottom is almost non existent

Or is this normal for a German wheat beer?

There are two reasons wheat beers tend to be cloudy.

The first is that wheat protein is left behind in the brewing process. This can give a haze to any beer that has some wheat in the grain bill for the mash.

However the main reason is the yeast, wheat beers use top fermenting yeasts.

These strains of yeast have a low flocculation. Flocculation is the phenomenon of yeast cells clumping together as they are spent and sink to the bottom of the beer as sediment. This is a desirable attribute in most beers because it leaves a nice clear brew behind. In wheat beers the flocculation is low, so the cells donít all clump together. This means that some of them are left in suspension giving the beer a cloudy appearance.
